MANGO STICKY RICE - Thai
mango, sticky rice
I cup sweet rice
per your choice of sweetness
can coconut milk
Soak rice in 1 cup water for 30 minutes.
Add ½ cup more water, ½ can coconut milk, salt, and 1 tablespoon sugar.
Once it reaches a gentle boil, cover leaving some room for steam and reduce heat
Simmer until liquid has been absorbed
On medium heat warm the remaining can of coconut milk for 4/6 mins
Add 4 tbsps of sugar and dissolve (taste
Scoop warm rice into a dessert plate
Drizzle with sauce (make sure you have enough to soak the rice)
Decorate with Mangoes and coconut flakes..
