What do rain/ sprinkles or even a cloudy day have in common with pakoras (fried fritters) and tea?
Well, nothing unless you are Indian! If you have Indian friends you may have noticed their FB posts that say … ooh it’s raining, it’s pakora & chai( tea) time. Not sure how this “tradition” ever got started. Do you know?
This is a simple twist on eating pakoras.. be it for a rainy day or sunshine accompanied with a glass of wine.
All you do is follow the pakora recipe, get your favorite wrap(roti/tortilla) of choice, spread some chutney, add the pakoras, fresh onions, lettuce with a dash of chaat Masala and yum!!
Spinach Pakora Wraps
- 1 cup Chickpea Flour/besan
- 4 cups Chopped Fresh Spinach
- 1 Large Onion Long Slices or Diced
- 2 Small Potatoes Diced
- 3 Green chilies or per taste
- 1 tsp Red chili powder
- 1 tsp Amchur/Mango Powder optional*
- 1 tsp Chaat Masala Boxed street snack spice*
- 1 tsp Coriander Powder optional*
- Salt per taste
- Oil for frying
- Indian Rotis or Tortillas
- 1 Small Onion Sliced(long)
- Chopped Lettuce
- Mint/Cilantro Chutney
- dash Chaat Masala
- Chop the spinach roughly(not finely).
- Dice chop onions and potatoes into small pieces
- Add chickpea flour, spices and mix well
- Add little water as needed to make a batter
- Heat oil on low to medium heat in a wok
- Use a medium-slotted spoon to drop small amounts of batter in the wok (I use another small spoon to glide it gently into the oil)
- Let them sit on a paper towel to let the excess oil drain
Assembling the Wrap
- Spread some Green Mint/Cilantro Chutney on the tortilla
- Add some freshly chopped onions and lettuce
- Sprinkle some Chaat Masala
- Roll into a wrap and it is ready!!
- Do not add too much water to the batter, it should not be runny.
