Who doesn’t love that just perfect refreshing drizzle for your Mexican spread be it nachos, tacos, or quesadillas?

We even use it as a salad dressing as it adds just the perfect tang and can stay in the fridge for a few days. It’s also a perfect drizzle for Wraps or Kathi rolls (Indian wraps) and even salads. It’s one dressing that is always a must-have at our lunch table with our salads.

Green Me Some Cilantro Scallion Lime Drizzle

Ingredients

  • ½ cup Green onions/Scallions( just the green part)
  • ½ cup Cilantro leaves
  • 2 cloves Garlic
  • ½ cup Greek yogurt/Plain yogurt
  • Lime juice of 1 lime
  • 1 or 2 Small green chilis optional
  • 1 tsp oil optional
  • ½ tsp salt

Instructions

  • Use only the Green parts of the green onion/scallion
  • Blend together and chill for an hour

Notes

TIP: Do not overdo the cilantro otherwise it tastes like cilantro chutney
If using home-made yogurt it won’t be as creamy but tastes delish still
 

Also, a great way to grow your own scallions/green onions is to put the white parts in mason jars after you break off the green part for your dressing. And in a week or two, you will have your very own green onions. We keep our mason jars on the kitchen table and it not only adds a dash of color but truly table to mouth..haha you know what I mean.
