Mango Sticky Rice – Thai

I love to make this easy dessert Thai summer dessert when mangoes(make sure to read the fun fact about this later in the post) are in season. The taste of mangoes/coconut and rice is truly delectable and you will not be disappointed!

I used Sushi Rice for mine and it came out just perfect. But you can use the rice you have at home. Basmati rice may not be the best option though.

Fun Fact 1: Did you know that mangoes are the most popular fruit in the world and were first grown in India 5000 years ago. Legends also have it that Buddha used to sit under the mango tree to meditate.

Fun Fact 2: There is always a confusion if the plural of mango should be Mangoes or Mangos. Well, Oxford Dictionary says, its Mangoes. There is a rule about words ending in -o that says they take on -oes (obviously like anything else, there are exceptions). For example Tomatoes, Potatoes, heroes. And when words end in two vowels or if they are contracted forms, they take on -os. For example pianos, portfolios, cuckoos, radios, zoos.

So does this mean the plural of Burrito should be Burritoes :)? We may need to double-check that.

MANGO STICKY RICE – Thai

Ingredients

  • I cup sweet rice
  • 1½ cup water
  • 5 tbsp sugar per your choice of sweetness
  • ¼ tsp salt
  • 1 can coconut milk
  • 2 mangoes
  • Coconut Flakes optional

Instructions

Rice

  • Soak rice in 1 cup water for 30 minutes.
  • Add ½ cup more water, ½ can coconut milk, salt, and 1 tablespoon sugar.
  • Once it reaches a gentle boil, cover leaving some room for steam and reduce heat
  • Simmer until liquid has been absorbed

Sauce

  • On medium heat warm the remaining can of coconut milk for 4/6 mins
  • Add 4 tbsps of sugar and dissolve (taste

To Serve

  • Scoop warm rice into a dessert plate
  • Drizzle with sauce (make sure you have enough to soak the rice)
  • Decorate with Mangoes and coconut flakes..
